The story of Katrín H. Árnadóttir, founder of Ecospíra

“After suffering for many years from generalized swelling and pain, and after fruitless visits to many doctors, I decided in 2007 to explore unconventional options in an attempt to regain my health. I studied research on healthy diets, including those based on sprouts and their positive influence on bodily functions.

I decided to change my diet and eat only living, green food, with sprouted food as my main source of nutrition. The chronic swelling and pain disappeared, and a few months later, my health problems were gone.

My experience was the stimulus behind the founding of Ecospíra in the autumn of 2012 – a food company whose aim was to produce high-quality, healthy food based on sprouted raw materials.

What I learned was that food, along with moderate exercise, has a huge impact on our physical and mental well-being. I am convinced that pure and nutritious food, combined with moderate exercise, is our strongest weapon in the fight against the diseases that plague mankind today, including cancer, Alzheimer’s disease, heart disease, high blood pressure, musculoskeletal problems, and many other ailments. After recovering completely from my health problems, I decided to devote my professional energy to producing food that would provide anyone who consumed it with energy and wholesome nutrition.”

Sprouted food’s positive effects on health

Research by numerous scientific institutions, including the National Institute of Health, the American Cancer Society and Johns Hopkins University, has demonstrated the cell-protecting and health-improving properties of sprouts, as well as their great nutritional value.

Sprouted food contains a great deal of antioxidants and bioactive enzymes, which are important for the body’s maintenance and renewal. Sprouting seeds increases their enzyme, vitamin, and mineral content.

During sprouting, proteins break down into amino acids, carbohydrates into monosaccharides, fats into fatty acids, etc. Sprouting breaks nutrients down into a form that the body can utilize and absorb through the mucous membranes of the digestive tract.

Thus, when eating sprouted food, the body does not use up energy or its own enzyme supply in order to digest this food. Enzyme-rich food is easily digested, because if facilitates the absorption of nutrients by the body.
